Thank you for making home made flour tortillas. If you don’t want to make home made just get your store bought and lay them on a pan and they will bubble up. Turn them over after a minute. They aren’t as good as home made, but you might find it easier.

Normally, you’re …
Normally, you’re totally right, but this meal already has a lot of fats and using cream may simply make the whole dish too heavy. You’ve got the butter, the corn oil, and the lard to really bring on that substantial flavor. Milk (not skim, not cream, just regular milk) should be fine for the eggs.

I agree with adding milk to eggs it does make them fluffier and if you’re cooking for a big mexican family then the little bit of milk can help stretch the servings.

I like to add chili …
I like to add chili powder to the eggs instead of just salt & pepper. Also, depending on where you live you may be able to find a grocery store or Mexican bakery that will sell you fresh tortillas. They won’t keep for more than a day or so because they don’t have preservatives, but they’ll taste better than the grocery store kind. Here in Austin, the HEB on Oltorf has an in-store tortilleria and I think Fiesta stores sell fresh tortillas as well. For those of us too lazy to make our own. =)

When he says 10 minutes, hes referring to the lesson, not the time it takes to cook. In the other 10 minute cooking school he makes a pork dish that takes over 3 hours until it’s ready.
